In the Beginning...The Roaster Arrives

We have been making bean to bar chocolate here at Sjölinds for about 4 years. However, our operation has been so small I don't think you could even call it micro batches; maybe nano batches?  This last year we started selling the bars so fast we have been working towards building a larger scale operation; upgrading manufacturing space, finding larger equipment and a larger quantity of beans.  

Our roaster, until this time has been about the size of a toaster oven.  It has worked great but only roasts couple pounds of beans at a time.  This last week our first piece of the larger equipment arrived, the roaster!  It's a real beauty!  It feels like Christmas for grown-ups.  I'll keep you updated as progress on this great adventure develops.
